City of London Old Tom Gin

An older style of gin pre-dating London Dry, Old Tom was born as a response to poor-quality alcohol being produced in people’s own homes in London. Sugar and strongly-spiced botanicals were added to make it more palatable and to hide the flavour of impurities in the spirit.

Now we use it to create a more boldly flavoured gin, using some extra spice that is then balanced by a small amount of sugar. This is still by no means a sweet gin, rather a balanced one to produce a more rounded end profile. Botanicals; Juniper, Coriander Seed, Angelica Root, Orris Root, Lemon Peel, Orange Peel, Cardamom, Cassia Bark

Aroma

A little alcohol on the nose. Sharp pine notes and aromatic baking spices. Definite notes of orange.

Palate

Well balanced, a subtle sweetness accompanies the orange and cassia notes. The citrus leans more toward bright lemon.

Finish

The soft sweetness continues with rounded orange and spice notes.
